Grilled Corn, Tomato & Black Bean Salad

Based on Bobby Flay’s Corn and Tomato – Sweet Onion Salad with Fresh Basil Dressing and Crumbled Blue Cheese.  I’m not a huge blue cheese fan, and black beans seemed like good addition.

Time: 1hr?

  • 1/4 C rice wine vinegar
  • 1/4 C chopped basil
  • 1 tsp sugar
  • salt & pepper
  • 4 ears of corn (or whatever you got) roasted in husk.  Give ’em 15min or so on each side at approx 400 F.  Remove kernels as soon as cool enough.
  • 1 vidalia onion, very finely chopped
  • 1 pint mixed tomatoes (whatever kind you got), cut into edible pieces
  • 1 can black beans, drained and minced

Food process vinegar, basil, sugar,  1/2 tsp salt, 1/4 tsp pepper until smooth.

Combine corn, tomatoes, onion and beans.  Toss with dressing.
